Ticket Time
How long an order takes from fired to finished on the line.
Ticket time measures the interval between an order reaching the kitchen and being completed, and it is the single most useful kitchen performance metric because guests experience it directly. Track the distribution rather than the average — the slow tail is what generates complaints. A kitchen display system makes it measurable at all, since paper tickets leave no timestamps to analyse.
