Expo (Expediter)

The person who coordinates the pass between kitchen and dining room.

The expo, or expediter, stands at the pass calling orders, checking plates for accuracy and presentation, and timing courses before food goes out. They're the bridge between the line and the servers. An expo working off a KDS — as in Opero — sees every ticket's timing across stations, which helps keep coursing tight during a rush.
