Surviving Friday night

A pizzeria's peak is limited by the oven, not by the till. How to pace orders against real bake capacity and stop promising times you cannot keep.

Most restaurant peaks are limited by ordering capacity or by staff. A pizzeria's Friday is limited by a physical object with a fixed number of slots and a fixed bake time. That changes what the right response to a rush actually is.

Know your ceiling as a number

Oven capacity is arithmetic: how many pizzas fit, divided by the bake time, gives pizzas per hour. Every pizzeria should know that figure, and a surprising number do not — which means they cannot tell whether a bad Friday was demand, staffing or physics.

Once you know it, several arguments resolve themselves. Adding a person at the till does not raise it. Taking more orders does not raise it. Only a faster bake, a fuller oven or another oven raises it.

Accepting orders past the ceiling

This is the central Friday-night decision. Once inbound orders exceed bake capacity, every additional order joins a queue that is already growing, and the quoted time you give the fortieth caller is fiction by the time you say it.

  • Quote from the actual queue depth, not from a standard number you always say.
  • Extend quoted times early rather than late. A guest told ninety minutes at the start orders anyway or does not; a guest told forty and delivered at ninety is a complaint and usually a refund.
  • Consider pausing a channel rather than degrading everything. A short pause on one inbound stream protects the guests who already ordered.
  • Protect the promises you already made. Every new order accepted makes an existing one later.
The trade nobody states out loud

Accepting an order you cannot bake on time does not add revenue. It converts one satisfied guest into two dissatisfied ones — the new order that arrives late, and the earlier one it pushed back.

Fill the oven, not the queue

A half-full oven during a rush is capacity you will never get back. Sequencing so that pizzas of similar bake requirements go in together, and that the oven is never waiting on the make line, is worth more than any speed improvement elsewhere.

That means the make line has to run slightly ahead of the oven rather than in lockstep with the order queue, which is a different instruction from 'work faster'.
