Good pacing is a communication problem before it is a software one. How dining rooms coordinate courses, and what changes when a POS has no fire button.
Pacing is the part of full service guests notice most and describe least. Nobody leaves saying the coursing was well managed; they say the evening felt right. What they are describing is a sequence of decisions about when food leaves the kitchen relative to how a table is actually eating.
Pacing is a communication problem
The information that decides pacing lives in the dining room, not the kitchen. Whether a table is lingering over wine, whether one guest is still waiting on a starter, whether the party is clearly in a hurry — none of that reaches the line unless someone carries it.
Which is why the best-paced rooms are usually the ones with a clear convention about who owns the decision, rather than the ones with the most software. The common convention is that the server or expo controls when a course is called, and the kitchen works to that call rather than to the order of tickets.
Doing it without a fire button

Ringing courses as they are needed means more trips to a terminal — or a handheld — and it puts the pacing decision on a person rather than a timer. Rooms that already pace by conversation lose very little; rooms that rely on the software to hold courses will feel the difference immediately.
What actually goes wrong with pacing
- ✓The whole table rung at once, so the kitchen decides pacing without knowing the room.
- ✓No single owner of the call, so two people cue the same course or nobody does.
- ✓Starters and mains from stations with very different times, fired together.
- ✓A drinks order that never reaches the table before the food does, which no kitchen timing can rescue.
