The card industry's security standard for anyone who handles cardholder data.
PCI DSS is the Payment Card Industry Data Security Standard, a set of requirements every business that stores, processes or transmits card data must meet, validated annually through a self-assessment questionnaire for most restaurants. The practical goal for an operator is to keep raw card data out of your own systems entirely, because scope you do not touch is scope you do not have to secure. Platforms that tokenize card data and keep entry inside the reader or a hosted field substantially reduce that scope.
