COGS (Cost of Goods Sold)

What the ingredients in everything you sold actually cost you over a period.

Cost of goods sold is the ingredient cost behind the food and drink a restaurant sold in a period, the numerator of food cost percentage and half of prime cost. Opero computes it from sales rather than counts: each sale on the POS, kiosk, QR or online page depletes the ingredients in that item's recipe, priced at what you last paid, and the command center adds those depletions up, leaving out voided and cancelled orders. The result is a COGS built from what sold rather than typed in, but it is only as good as your recipes and received costs, and Opero does not yet report the variance between that theoretical usage and a physical count.
