Waste tracking logs product lost to spoilage, over-production, errors and breakage, and it is what explains the gap between the food cost your recipes predict and the one your inventory reports. Without it, that variance gets attributed vaguely to theft or bad recipes and never actually resolved. The discipline matters more than the tooling: a consistently kept log beats an elaborate system used inconsistently.
