Average Check
Net sales divided by covers — what a typical guest actually spends.
Average check divides net sales by the number of covers for the same period, and it is the lever most directly moved by menu design, modifier prompts and upselling. Read it alongside cover counts: a rising average check on falling covers can mean the room is quietly getting smaller rather than richer. Self-order kiosks tend to lift it, because a screen prompts every modifier consistently in a way a busy counter never does.
